The Art of the Edge

For years, our founder lived behind the pass of high-pressure professional kitchens. As an executive chef, she knew that a knife was never just a tool; it was an extension of the hand and the most critical variable in the pursuit of perfection. But while the steel was functional, it lacked a soul.

Seeking a different kind of precision, she turned to the quiet sanctuary of the wood shop. Her lifelong passion for fine woodworking and the complex chemistry of modern resins eventually collided with her obsession for high-end metallurgy.

She began curating the finest foundations for her work: full-tang Japanese AUS-10 Damascus steel. Featuring a high-performance core for a surgical edge, each blade is protected by 66 layers of folded steel (33 per side), creating a resilient, rust-resistant blade that performs with grace under the rigors of daily use.

But the true soul of the knife is born in the handle. Every piece is a bespoke collaboration, hand-shaped to a client’s preference using a palette of premium materials, from the deep shadows of Macassar Ebony and Walnut to the intricate grain of Spalted Maple and Olivewood. Using top-tier resins that resist yellowing or cracking, she finishes each handle with hand-set pins in copper, brass, or stainless steel.

Because every handle is custom-designed and hand-finished, no two knives are ever identical.

Today, Against the Grain is the culmination of that journey. We don’t just build knives; we forge functional legacies. These are heirloom pieces designed for those who understand that the most memorable gifts are the ones that last a lifetime.
